Last Shot Bar and Grill’s patio open for business in Thornton

'I'm still at only about 50 per cent of my restaurant capacity. What happens in the fall is ... the main concern right now,' says owner

Thornton’s Last Shot Bar and Grill is back in business like many other restaurants, but the past few months were not without their challenges.

Before June 12, when patios in Simcoe County were allowed to open, the Last Shot was surviving on takeout and delivery, as well as selling individual items like produce and meats.

“We turned into a mini grocery store for a little while, and it helped us survive for the last three months,” said Tobin Browning, who owns the bar with Cory Clapperton.

Overall, Browning says, the restaurant saw a 50 per cent drop in sales while it was unable to have customers inside.

“We have a lot of support within the community, for sure,” he said, noting the restaurant often sponsors sports teams. “It was nice to see them turn around and (support us with) take-home and delivery.”

With an extended patio, he is able offer those customers a sit-down experience again.

“I'm still at only about 50 per cent of my restaurant capacity," he said. "What happens in the fall is ... the main concern right now.”

In June, Ontario Finance Minister Rod Phillips said Phase 3 of  reopening, which could come in a couple weeks, would allow people back  in restaurants.

While he’s thankful to be partially open, Browning said it has been a "fly by the seat of your pants" experience.

“We’re just kind of learning as you go and hoping for the best,” he said.

Another curveball for the Last Shot is the fact that singing and  dancing is not permitted on patios yet, effectively stopping live music.

“That was a big part of my business,” Browning said. “It's something that I have to sort of change and adapt to.”

He is also eager for professional sports to return, noting there are plans for TVs on the patio.

The Last Shot Bar and Grill is located at 4171 Innisfil Beach Rd.
